Gnocchi and Spiced Chicken Tray Bake

Ingredients
- 1 tablespoon paprika
- 1 tablespoon dried oregano
- 2 teaspoons cumin
- 2 teaspoon coriander
- 2 teaspoons garlic granules
- 1kg chicken thigh fillets
- Olive oil spray
- 2 red onions, cut into eighths
- 1 red capsicum, cut into 2 cm pieces
- 1 yellow capsicum, cut into 2 cm pieces
- 1 cup Sicilian green olives
- 500g Grand Italian Potato Gnocchi
- Salt and pepper, to taste
- 100g feta cheese, crumbled
- A good handful of baby spinach leaves
Method
1. Combine the herbs and spices in a bowl, add the chicken and toss to coat well.
2. Spray a large shallow baking dish with oil then add the chicken to the pan with the onions, capsicums and olives, spray again with oil.
3. Bake the chicken at 180°C FF for 15 minutes then add the gnocchi pieces to the pan. Spray the gnocchi with oil and bake a further 30 minutes. Season to taste.
4. Sprinkle over the feta and spinach. Serve immediately.
