Gnocchi 3 Cheese Bake with Slow Cooked Pork

Ingredients
– 60g butter
– 1/4 cup plain flour
– Salt and pepper, to taste
– 2 1/4 cups milk
– 2 teaspoons Dijon mustard
– 1 cup grated Swiss cheese
– 1 cup grated tasty cheese
– 1/2 cup shredded Parmesan cheese
– Salt and pepper, to taste
– 2 x 500g Grand Italian Potato Gnocchi
– 1/3 cup panko crumbs
– 1 tablespoon melted butter
– Steamed beans, to serve
Method
1. Melt the butter in a medium saucepan over a medium heat, add the flour and cook for 1-2 minutes. Whisk in the milk until smooth, bring to the boil stirring until thickened, reduce the heat then add the mustard, Swiss and tasty cheese with half the Parmesan cheese. Stir until the cheese has melted, season to taste. Remove from the heat.
2. Boil the gnocchi according to the directions on the pack, drain well then stir through the sauce until well combined. Spoon the gnocchi into a 2 litre gratin or shallow baking dish.
3. Combine the panko crumbs with the melted butter and remaining Parmesan. Sprinkle over the gnocchi and bake at 180°C for 25-30 minutes or until golden. Serve immediately with Slow Cooked Pork and beans.
NB
The combination of Gnocchi and cheese sauce is a delicious take on the age old favourite Mac N Cheese.
Smokey Slow Cooked Pork

Pork 4 - 6 Hours
Ingredients
– 3/4 cup Smokey BBQ sauce
– 4 cloves garlic, crushed
– 2 teaspoon instant coffee dissolved in a little water
– 1 teaspoon dried chilli flakes
– 1.5 kg piece of pork neck / pork scotch
– 2 teaspoons cornflour blended with a little water
Method
1. Combine the sauce, garlic, coffee and chilli flakes. Place into a snap lock bag with the pork, ensure the pork is evenly coated then marinate 2 hours or overnight.
2. Place the pork and marinade into a slow cooker and cook on high for 4-6 hours until tender.
3. Once cooked remove the pork and wrap in foil. Add a little blended cornflour to thicken the pan juices and cook a further 15-20 minutes. Slice or pull the pork and serve with the thickened sauce.
