Festive Baked Gnocchi with Spicy Tomato Sauce

Ingredients
– 2 tablespoon olive oil
– 2 onions, finely chopped
– 4 cloves garlic, crushed
– 2 red chillies, finely chopped
– 300g left over smokey Christmas ham, diced
– 2 x 400g can cherry tomatoes
– 1/2 cup tomato paste
– 3/4 cup white wine
– 1/4 cup water
– 1-2 teaspoons brown sugar
– Salt and pepper, to taste
– 1 x 500g Grand Italian Potato Gnocchi
– 1 x 500g Grand Italian Spinach Gnocchi
– 1 cup grated tasty cheese
– 2/3 cup shredded Parmesan
– Fresh green salad for serving, if desired
Method
1. Heat the oil in a saucepan and sauté the onion, garlic and chilli until onion is translucent. Add the ham and cook a further 5 minutes
2. Add the tomatoes, paste, wine, water and brown sugar then simmer gently for 20 minutes. Season to taste.(If acidic add a little extra brown sugar)
3. Boil the gnocchi in a large saucepan as per the packet instructions then drain well and stir through the hot tomato sauce. Transfer the combined mixture into a 2.5 litre baking dish and top with the cheeses.
4. Bake in a moderately hot oven 200°c (180°C FF) for 30 minutes or until thoroughly heated and cheese is golden. Serve immediately with green salad.
NB
Why not mix it up by swapping in another of the delicious Grand Italian range. For example: Sweet Potato or Beetroot in place of the Potato or Spinach.
