Cheesy Cauliflower Tortellini Bake Recipe

Ingredients
-1/2 large cauliflower, trimmed and cut into small florets
- 325g pack of Grand Italian Four Cheese Tortellini
- 500g cheese sauce
- 225g fresh baby spinach leaves
- 150g cherry tomatoes, halved
- 150g shredded mozzarella
Method
- Bring a large pot of salted water to boil on the stove and add the cauliflower. Cook for 3 minutes, add tortellini and cook for a further 3 minutes or until the pasta is cooked and the cauliflower is tender. Drain well, reserving 100ml of the cooking liquid, and tip into a baking dish.
- Heat the cheese sauce in a pan. Add the spinach leaves and the reserved cooking liquid and stir until the spinach wilts.
- Pour the sauce over the pasta and cauliflower, and scatter with the tomatoes. Scatter mozzarella cheese over the top. Grill for 5 minutes or until golden and bubbling. Perfect on its own, or serve with a side of salad.
